Apple Filling:

  • 1.25kg (8 large) apples, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (31g) all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Make pie dough by combining flour, sugar, and salt; cut in cold butter until crumbly
  2. Add ice water gradually until dough forms; shape into disc and refrigerate 2 hours
  3. Prepare crumble topping by mixing brown sugar, cinnamon, flour, and nuts with melted butter; refrigerate
  4. Roll chilled dough into 12-inch circle; fit into pie dish, trim and crimp edges
  5. Brush crust with egg wash; refrigerate while preparing filling
  6. Combine sliced apples with sugar, flour, lemon juice, and spices
  7. Preheat oven to 400°F with baking sheet on lower rack
