Ingredients

  • 1.5 lbs chicken thighs or breasts
  • 8 cups chicken broth
  • 1 onion, diced
  • 3 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 3/4 cup kale or spinach
  • 1 tsp thyme
  • 1 tsp parsley
  • 1 bay leaf
  • Salt and pepper
  • 2 tbsp olive oil or ghee

Instructions

  1. Heat oil in a pot and sear chicken on both sides.
  2. Sauté onion, celery, garlic, mushrooms, and zucchini.
  3. Pour in broth, add herbs, return chicken and simmer.
  4. Remove chicken, shred, and return to pot.
  5. Add greens and simmer until tender.
  6. Season and adjust flavors.
