0.5 cup cooked brown rice
1 tsp rice vinegar
0.5 tsp extra virgin olive oil
0.25 tsp matcha powder
1 pinch sea salt
2 tbsp water (for adjusting consistency)
4 pitted black olives
1 crushed walnut
6 goji berries
2 fresh parsley leaves
0.125 nori sheet
Instructions
In a large bowl, whisk together rice vinegar, olive oil, matcha powder, and a pinch of sea salt to create a dressing.
Stir in the cooked brown rice until fully coated. Add water, 1 tbsp at a time, until the rice is sticky enough to hold its shape.
Lay a sheet of cling wrap on your work surface and spread the matcha rice in an even layer.
Place 3 pitted olives, the crushed walnut, 5 goji berries, and parsley leaves in the center. Use the cling wrap to tightly gather the rice around the filling, forming a compact ball.”
From the nori sheet, cut a zigzag pattern for hair and thin strips for a stitched mouth.
Slice the last olive into rings for eyes. Stuff small pieces of the last goji berry into the center of the olive rings to create pupils.
Gently press the nori hair, mouth, and olive‐goji eyes onto the rice ball to bring your monster to life. Re-wrap briefly in cling wrap to help the decorations adhere.
