Sweet, juicy cherry tomatoes roasted with olive oil, garlic, and herbs. Perfect as a side, topping, or pasta addition.

Ingredients

  • 2 cups cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme or rosemary (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
  • Toss halved cherry tomatoes with olive oil, garlic, salt, pepper, and herbs.
  • Spread tomatoes in a single layer on the sheet.
  • Roast 15–20 minutes until blistered and caramelized.
  • Serve warm as a side, on toast, or stirred into pasta.

Notes

  • Use grape tomatoes as a substitute.
  • Add balsamic vinegar for deeper flavor.
  • Sprinkle with red pepper flakes for spice.
  • Swap herbs with oregano or basil.
  • Store up to 4 days refrigerated; reheat in skillet or oven.
