Chewy Scotcheroos are no-bake dessert bars made with Rice Krispies, creamy peanut butter, and a rich chocolate-butterscotch topping. Perfect for holidays, potlucks, or anytime you want a quick sweet treat.

Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  • Grease a 9×13-inch baking pan and set aside.
  • In a saucepan over medium heat, stir corn syrup and sugar until mixture begins to boil. Remove from heat.
  • Stir in peanut butter until smooth.
  • Pour mixture over Rice Krispies in a large bowl and stir until evenly coated.
  • Press mixture into prepared pan, smoothing the top.
  • Melt chocolate and butterscotch chips in 30-second microwave intervals, stirring until smooth.
  • Spread topping over cereal layer and refrigerate at least 2 hours.
  • Cut into squares and serve.

Notes

  • Don’t overcook the sugar mixture remove from heat as soon as it starts to boil to keep bars soft
  • Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
